    I can't believe it's already over! I didn't get to do two of my one time actions, but I still intend to complete them soon.

    This weekend I procured some GIGANTIC sweet potatoes from a farm co-op in Harford County! I can't wait to cook one up for dinner tonight and have leftovers for days. I also have some spaghetti squash and made homemade pasta sauce from farm tomatoes on Saturday. It was a good weekend, especially with taking a break from my vegan challenge.

    My mother is requiring me to take a 24 hour vegan break while at her house. I can't say I'm super torn up about it since I really miss dairy!

    I think tonight I'm going to have to do a bit of grocery shopping. Turns out I have to eat a LOT more to stay full without dairy in my diet!

    Made some excellent vegan pancakes last night! I was craving some comfort food and the boxed vegan mac n cheese from the night before did not do the trick. Note to self: don't eat any more boxed vegan mac, it does not taste even remotely the same.

    Because I am unable to compost in my apartment, I've been collecting and freezing for future compost when I move. It's a little inconvenient, but at least I'll have a good starter pile!

      I don't know if this is convenient for you either, but I have heard that MOM's and a facility at UMBC will take your compost. Maybe a place like this can be of help if you need the freezer space...

    So I spent my Saturday in DC and northern VA and I went to not one, but two vegan restaurants! One is an all vegetarian Indian place in Reston which was amazing and the other was a vegan BARBEQUE PLACE!!! I can't tell you how much I've missed good barbecue food in my years of being a vegetarian and to find a restaurant in DC with vegan barbecue was a dream come true. Even the meat eaters were loving it!

    Today will be an adventure of learning how to eat vegan outside my own home! Not keeping dairy around is one thing, but going out and being tempted by it is entirely different.

    Adopting a vegan diet hasn't been as hard for me this go around! I'm learning how to balance what I eat with how much I exercise. My dog is really enjoying the extra walks!
