    I'm definitely planning to extend my plant-based diet past the challenge.  This has been a great experience for me.

    Giving up all animal products was my "hard" challenge, and I have to admit it's not been nearly as hard as I expected!  I did go to a party yesterday and had to pass on most of the food offered, but I brought a vegan dish and enjoyed eating that and explaining to everyone why I'm a vegan now!

    I've been thinking about eliminating animal products from my diet for a while now.  This challenge is just the motivation I need to make this change!  I'm looking forward to feeling healthy and happy and showing respect for the earth during this challenge.
