    Since I have a football game tonight, I made vegan quinoa taco meat for dinner instead of buying dinner at the stadium with meat in almost everything. A great and delicious  lternative!

    I ended up making my own vegan burrito for the meatless meals challenge. The results turned out nice! And I also learned how to cook beans. :)

    So far, I've stopped 15 plastic bottles from going to the landfill. That sounds small but I think it's pretty crazy considering the amount of abandoned bottles I see on campus.

    Eating meatless meals has made me feel less lethargic throughout the day and has boosted my creativity in cooking my own meals!

    I not only made one doctor's appointment, I made FOUR! Nothing serious, just lots of checkups I've been putting off!! Glad this challenge forced me to get it done!

    Limiting social media once per day made me realize how much I check it in just a day. The element of mindfulness comes to mind as well.

    Doing this will make me calmer and happier and better able to take up the challenges of being an activist.
