    Last day of the EcoChallenge! It went by so fast! The past two weeks I made it a habit to be more mindful about the food I was eating. When you're in a rush it's easy to not think about it, so it was challenging (and rewarding) to stop and think about where my food was really coming from and what was in it. I also enjoyed seeing everyone else on the team post about their challenges. So proud of the Gerding Edlen LEEDers! :)

    Friday night consisted of a yoga class and dinner at Blossoming Lotus, an all pant based restaurant. I got a beet infused vodka cocktail and these nachos. So good!!
