I am already vegetarian and would like to eventually be vegan. I will be staying with families in Spain for one of the two weeks, and asking for vegetarian food is already a big ask. That's why I'm saying 'vegan as much as possible'.

Sally Fish 10/14/2017 3:36 PMEating a vegan diet in Spain is a little tricky without sacrificing my nutrition (a diet solely made up of bread/potato/salad) or going to a special restaurant (no good for my meat-eating family). Everytime I say I'm 'vegetariana', they sigh deeply/look at me like I'm crazy/start offering me fish dishes. Ironically I'm now eating more dairy than I was before I challenged myself to go vegan. Ha! Oh well, I tried. I'll have to slightly adapt my challenge: 'Vegetarian in Spain, Vegan in England'.
On a positive note, no plastic bags were harmed in the making of this trip, we have been refilling water bottles religiously and all of our waste is destined for the recycling plant!

Sally Fish 10/12/2017 4:08 PMMostly vegan menu - day two: beans on toast for breakfast, veggie Thai green curry for lunch, dinner with my parents - roasted vegetables with polenta fries and a mushroom bake (contained cheese as my mum didn't realise I'd taken the plunge). Still happy with my efforts and very grateful for a cooked meal with family. 😊 -

On today's vegan menu: avocado on toast for breakfast, sweet potato with beans and salad for lunch, veggie coconut curry for dinner, snacking on fruit/nuts/seeds. Show me the vitamins!

My Eco Challenge will be made extra tricky by being in Spain for one of the two weeks. Spain is not exactly known for its vegan options! Here goes...-
