    Our company potluck of local foods to wrap up the EcoChallenge was a big success, both in community building and healthy eating!  (OK, there
     were a few non-local exceptions, but overall a great feast celebrating the in-season and locally grown or produced)

    Today our company is having a potluck to celebrate locally sourced foods.  One of our team members got very creative and made a 'poster' of where her dish's foods came from (Thanks Ashley!).  This has been a fun experience and very tasty!

    Spending the weekend at the hospital with a family member, it was not easy to eat local and healthy.  It is surprising that should be the case.  In my dream world, they would be a model for real food eating, with fresh and local food stands and chefs waiting to prepare your selections.  Recipes could be given out with meals to take home and duplicate, hopefully moving towards a little healthier lifestyle for all when taking your loved one home.

    Our household changed our diet in 2016 from a center of the grocery store pattern to now shopping only in the outside aisles.  It has made a world of difference in our health, the amount of waste we have, the amount of local and fresh food we consume.  I'm ready to commit further to more local food for health, local economic opportunities for others and for environmental impact reasons.  This challenge is a good way to kick-start that focus.
