October 23 at 10:34 AMThis challenge has opened my eyes to quite a few small actions we can take to make a big impact. The meatless meal has been challenging, but i am finding some delicious alternatives that are filling and by far more healthy. I am loving my salad with walnuts and moon drop grapes!

Although I'm focusing on breakfast for my meatless meal, it's making me more creative about using leftovers and thinking up healthy alternatives (I decided not to buy veggie options but make my own). It's also inspiring me to start thinking...

October 23 at 10:16 AMOne step beyond the challenge is a weekly walking date with a friend...the challenge got us started; now our coffee dates have become coffee and walking dates.

October 23 at 10:14 AMA meatless meal is encouraging me to be more creative. I chose breakfast, and had leftover quinoa, which I made a pudding out of. Think it's going to be one of my favorite breakfasts from now on!
