Delaney Thompson 10/23/2017 7:18 PMAiming to be completely meatless for the last few days of my ecochallenge! So far today has been toast, veggie potstickers and a smoothie. Trying to figure out what to have for dinner. Maybe meatless tacos with beans and rice? -

Delaney Thompson 10/13/2017 7:30 PMToday I went to the mall with my boyfriend to shop for work clothes together. We had lunch; where I had a falafel gyro, which at first I was reluctant to have, but it ended up being really good. Then we went around shopping and I bought some reusable bags for shopping/everyday use. I really want to practice not using plastic bags in my normal life after the ecochallenge so getting those bags was a step in the right direction, plus they're nice looking. I didn't end up getting any clothing but my boyfriend got a nice cardigan, which he'll use at his new job. We then went to the grocery store for dinner and ending up getting some pesto tortellini and alfredo sauce. We also picked up some other vegetarian options for the rest of my ecochallenge, which will be really helpful!
The hardest part of the challenge today was that I couldn't find any opportunities to get in busing in rather than driving. Although, my parents were doing other errands so going to the mall and to the grocery store were stops along their days, so in a way we carpooled I guess. All in all today was more of an success in the food category than the driving category, which is something I'll just have to work on for tomorrow!
Breakfast: Banana and coffee pastry

Dinner: Pesto tortellini, alfredo sauce and cooked veggies
Traveling: Car to the mall, car to the grocery store, car to home.
