elise smith 10/13/2017 10:16 AMWhole foods, sugar-free day 3. In all honesty, being vegan and eating whole foods takes a lot of time in food prep. But in some way I feel more thoroughly invested in what I'm consuming, which leads both to a feeling of being more alive and as a by product, a slower life--a life in which I touch and process every piece of food on my plate. I think I'm coming to understand more what Thoreau meant when he said, "Wealth is the ability to fully experience life." -
elise smith 10/10/2017 9:14 PMFor me, the biggest obstacle to any major lifestyle change is mentally breaking down that change into small, short-term achievable goals (e.g. eventually I want to get rid of my car but I'm starting by biking anywhere I go that's less than 30 miles). So, thanks to the ecochallenge team for a creative way to work on my next steps!-
