Leah Sabraw 10/25/2017 3:10 PMDuring the challenge I found that it really wasn't that difficult to have two meatless meals a day, and I didn't really feel like I was missing out on anything. I do feel like Eco Challenge discouraged me from taking on way more challenges, but I think I could have taken on many more things. Maybe next year! -
Leah Sabraw 10/11/2017 8:01 AMI chose to eat 2 or more meatless meals a day, and to volunteer 4 hours in my community. I have been striving to eat less meat for a while and this sounded like a nicely defined way to achieve that. I volunteer somewhat regularly but similar to my meatless goal, I thought having an time goal to strive for will help me ensure I am actually tracking my time and committing to doing it.
