    My garden still has lots of lush parsley, and I hated to just compost it, especially given my challenge to reduce food waste.  So I made parsley pesto for the first time, and it's actually pretty good!  I expected to have leftovers, but my family scarfed it all up.  Good to know.

    I am definitely loving the commitment to spend time each day enjoying nature (the easiest of my challenges).  I have the good fortune to live close to Mt. Tabor Park, and I thought I knew every inch of that park, but today I took a side trip through the park on my walk to work and found a new trail!

    To begin my challenge of reducing food waste, today for dinner we had a lovely stir fry of all sorts of miscellaneous items that were getting old.  It was actually really good!

      Good work!  I find an egg scramble is another good place to put those refrigerator leftovers.
