    Beans and guacamole for lunch.  Gluten free mushroom pizza planned for dinner.  Yum

    Learning my limits. I did not sign up to be vegan but sometimes over the challenge I have been able to pull it off without that intention. I could be more intentional about it.  I do love cheese however and eggs....it make it a bit harder.

    Comic Con and a road trip with my love this weekend harder to keep challenge, but green chile fries are always a good option.

    Mushroom risotto on the menu for dinner and maybe fresh veggie ramen for lunch.  Yummy food is inspirational. :)

    The next two days are going to be interesting. Working and attending a confrence in ABQ.  I am packing nuts and some food so I won't be tempted to stray.

    Yesterday was a challenge as I had to be in Santa Fe all day, but I made it and was able to fulfill my 2 veg meal goal :)
