Final thoughts. The challenge was worthwhile to get me thinking about reducing waste, and supporting local farms and suppliers. I had gotten a little lazy on composting over the past year so we are back to nailing that process down. I also really appreciated support and ideas from Co-workers -

Aline Lommen 10/23/2017 6:44 PMThanks Lisa, good ideas. I have to give Kudos to Fred Meyer too. I took a picture of a container I had at home...on the food scale and filled it with lentils. showed the check out gal the picture of my scale and they accepted that and calculated the weight less the container!! -
Lise Harwin 10/23/2017 6:40 PMHere are some ideas: Almonds, plain Greek yogurt, cottage cheese, hummus. I love the hearty lentil and quinoa soup that they have in the refrigerated section at Trader Joe’s - these are both high protein foods.
When I eat Greek yogurt in the morning, I add a small handful of oats and nuts to make it more interesting and sometimes add a little unflavored whey powder to give it more protein without affecting the taste.
Lots of options out there - you’re doing great!

Doing well on sticking with two veggie meals per day but the big one I am very pleased with is getting focused on composting again. A family member and friend moved in with us so we have virtually no leftovers (very handy). Picked pumpkins from the garden this past weekend and I am cooking and freezing anything left after Halloween. -

Aline Lommen 10/17/2017 4:17 PMReceived an Instant Pot for my birthday and I am enjoying trying new recipes that cook in a pot but don't taste like crock pot meals. Made chili using dried Kidney beans which does not normally work well for me as the beans stay hard. The Pot cooked the beans beautifully and quickly. Energy saved...tin cans eliminated! -
Aline Lommen 10/11/2017 3:21 PMVegetarian dinner made last night...in preparation for tonight. All of the ingredients....except for the broth...are from our garden. yumm! -
