    When I first picked my challenge, I was planning it would be really tough. The challenge I chose was to eat more meatless meals, and recently I've been trying to increase the proteins and calories I've been eating in order to help gain weight. While trying to gain this weight, I was mostly eating meats like chicken and steak, figuring meats were the best way towards gaining my goal. But after hearing in class how much oil meats use, I figured it would be a good challenge for me to help make this change in my diet. I did some of my own research, and I was able to find a few alternatives to eat. I found out that rice was one of the most calorie/protein dense foods as well as eggs, both of which I enjoy eating a lot of! Eating those as well as many more fruits and vegetables, I feel like this challenge not only helped me help the environment, but I feel like I've helped myself and my overall health too.
