    This has been a great challenge! I've enjoyed more meatless meals in the last two weeks than I have in the last year. And even though it was a simple challenge, writing down 3 things I'm grateful for every day really did help to re-frame my mindset during times that seemed very stressful.

    The colder weather makes it more difficult to keep with 5 minute showers. But, I have upped my meatless meals from 1 to 2. That's been a much easier transition that I expected it to be.

    I started with a fairly easy one, the 5 minute shower. It didn't really seem that much shorter than my normal showers. And today was probably easy because I didn't actually wash my hair...
