    My favorite part of this challenge so far is my lower grocery bill due to all of the vegetarian dishes I'm making!

    Does anyone know of any Farmer's Markets that stay open year-round? Many are starting to wind down for the season.

    I made a meatless butternut squash pasta last night using a squash grown in a friend's garden. Yummy and Local!
