    My last meal plan consisted of two gluten-free waffles and a bowl of Cheerios with almond milk for breakfast, a grilled chicken salad for lunch, and a pan-seared salmon filet with potatoes and brussel sprouts.

    I'm starting to get use to the new changes in my diet. I hope after this is over i'll keep carrying it through for the rest of my adult life.

    I completely dropped the ball last night cause I couldn't prepare three meals, but today I had enough time to do it. For breakfast I had a bowl of organic cornflakes with almond milk, chicken soup and fruit for lunch, and a roasted pork chop with smashed potatoes and vegetable medley.

    I would've completed my goal yesterday if only i had more dishtowels to wipe my pots and pans after each meal. Thankfully I had enough quarters last night  do my laundry.

    It was tough trying to fit three meals into my busy schedule but I made it happen. I had oatmeal for breakfast, leftover rice and chorizo for lunch, and steak, potatoes, and sauteed greens for supper.

    Yesterday I had two gluten-free waffles with 100% pure maple syrup for breakfast. Lunch I made whole grain rice with a little roasted chorizo. Dinner I had roasted lamb chops with sauteed kale and potatoes without any oil or butter.
