    My hubby and I have gotten on a kick of "grocery shopping in our own kitchen" before going out to purchase any new food. The creative dishes we're able to make as a result is such a huge benefit of this challenge! I am definitely sticking with meal planning as EcoChallenge officially comes to a close.

    Woo to the hoo! Yesterday's kick-off EcoChallenge event, Healthy Food, Fun & Games (taco bar & trivia), was a smashing success. Thank you to those who joined! Don't forget: Tomorrow, Thursday, 10/5, Office of Sustainability is hosting a 30-minute Climate Change 101 lunch and learn in the Elm Room of the Multnomah Building from 12 - 12:30pm. Food provided. Hope to see you there!
